Waffles

My most favorite breakfast food in the whole wide world, and I have eaten many breakfasts in many places in the whole wide world, is crispy, fried bacon (Marcel is a fantastic bacon fryer). My second most favorite is crispy WAFFLES!. I mean the kind that dad used to serve up from our old waffle machine. Thick Belgian ones, or those covered with strawberries, blueberries, chocolate chips or whipped cream are fine for some folk. Not for me. I want thin ones toasted on a plain old waffle iron.

When Marcel and I camped out in Beaumont after IKE, we discovered an older WAFFLE HOUSE close to our apartment. This establishment helped raise our spirits during those dark days. Not long ago I had a doctor’s appointment in Beaumont. It was one of the kind where you have to fast. So, when the appointment ended, I was very hungry. What did I crave? Crispy bacon and crispy waffles. Where was that WAFFLE HOUSE that we had so enjoyed? Right where it had always been-off HWY 105 near Dowlen Rd.

This was the first time that I sat where I could watch food preparation. That cook was the fastest man I have ever seen. A server quickly read orders for a group. Cook never broke a sweat as he quickly fried bacon, filled the waffle irons, cooked hash browns, toasted bread, and concocted myriad other combinations. A charming waitress delivered my order. Crispy bacon, scrambled eggs, grits, and a crisped to perfection waffle. I slathered massive amounts of butter over this culinary delight. Then, I poured a little syrup on the side. Don’t want to lose any crispiness. Oh, feast of the gods!

Sometimes the pleasures of a fondly remembered meal are reproduced and provide comfort in time of crisis. Such it was, and is, at WAFFLE HOUSE located off HWY 105 near Old Dowlen Rd, Beaumont, Texas.
